Grilled tuna with mashed potato and avocado

Ingredients for 4 persons

  • 4 tuna steaks, ready to cook, approx. 180 g
  • 700 g starchy cooking potatoes
  • 1 avocado
  • 1 big lemon, juice
  • 1 handful chervil
  • 1 tbsp. butter
  • 4 tbsp. olive oil
  • 4 anchovies, in oil
  • 80 ml fish stock
  • 1 tsp red peppercorns
  • salt
  • cayenne pepper

Prepreparation
Dice the potatoes into small cubes and cook them in salted water for about 15 minutes. Meanwhile halve the avocado, trigger the kernel, remove the peel and dice the pulp of about about 1 cm. Mix it with 1-2 teaspoons lemon juice. Break off the chervil, shake it dry and put spmething aside to garnish. Finely chop the rest. Drain the potatoes, add the butter and finely crush the potatoes with the bean masher. Add the avocado and half of the chopped chervil and season it with salt. Keep it warm in a closed pot.

Preperation
Rinse the tuna, pat dry, salt, pepper and brush with 1-2 tablespoons of oil. Cook on the hot grill on each side for approx. 1 minute (longer or shorter depending on how you like it cooked). Remove from grill and place on a preheated plate. Put the remaining oil and anchovies in a pan. Pan-fry the anchovies at high heat until they disintegrate. Then stir in the remaining lemon juice and fish stock, bring to a boil and reduce slightly. Season with cayenne pepper and salt. Arrange the fish with the mashed potatoes and the sauce. Serve garnished with crushed pepper and chervil.
