Wild salmon




Since the mid-1970s, salmon has become the most popular fish in the country. It is even the world's number one fish when smoked. Once it was reserved for connoisseurs as a delicacy, until the legendary recipe "Combination à la Troisgros" was invented in a French restaurant in 1973. This combination of salmon with sorrel and a wine sauce started the salmon boom. It then became possible to have the fish in every restaurant, every supermarket and household by breeding it on a large scale.
Salmon is impressive because of its tender meat, very delicate, but strong flavor and the many ways it can be prepared. In addition to the farmed salmon, there are also different types of wild salmon, such as humpback salmon, keta salmon, red salmon and king salmon. In terms of taste, however, they are in no way inferior to the slightly higher-yielding farmed salmon. While farmed salmon are bred all year, autumn is the season for wild salmon.
