The herring is a small school fish that can hear very well, which makes it very shy. Did you know that no other fish has had such a large economic importance in history as herring? Herring has started wars and saved people from famine ... while it's popularity has risen steadily. In Germany today, herring products make up around one fifth of purchased fish.

The main season for herring is between June and August. The fish is especially tender and strong in flavor during this time. Due to its high fat content and its solid structure, herring is perfect for frying and grilling. It can also be marinaded or salted. A particularly popular type is the famous matie herring, which is enjoyed plain or with a sauce and simple side dishes such as jacket potatoes.
