Cod from the Lofoten islands is known as skrei (an old Norse word meaning "wanderer"). It is caught from February to April, when it swims in large schools from the Barentsee to the Lofoten islands. It is ideal for frying or steaming.
The redfish (also known as ocean perch) lives predominantly in the northeast Atlantic. The young are born alive and free swimming. They can grow to a length of 1m, weigh up to 15 kg and live to the grand old age of 60 years. The firm meat of the redfish is full of flavour and is particularly good for frying. Since the redfish has poisonous spikes on the dorsal fin NORDSEE offers it practically bone free.
The trout belongs to the salmon family (salmonidae). It is catagorised into rainbow, salmon and brown trout. Their closest relatives, besides the salmon, are the char and the huchen, a native of the Danube. Trout is bred in aquacultures and is also available as an organic option. NORDSEE offers whole fresh rainbow trout or as a smoked fillet.
