For each mussel place 2 thawed out pieces of filo pastry on top of one another, to prevent tears when wrapping. Place a fried Jacob’s mussel and a few mushrooms in the centre of each (pic. 1).
Fold up the 4 corners and gently twist together. Bind together using a long, firm, chive stem or a piece of cotton thread (pic. 2).
