3 to 4 years pass until the oyster delicacy may actually arrive on the plate. Oysters give their origins away by their taste, colour, size and form. The light green colour of the gills arises from its habitation in the 'Claires', the refining station for oyster breeding. NORDSEE oysters come from strictly controlled breeding in France, Ireland and the island of Sylt.
